2 tsp cumin

▢1/2 tsp fenugreek powder (see Note 2) 
▢3 / 8th of a teaspoon of ground cloves 
6 cloves of garlic, minced 
1 tablespoon fresh ginger, finely grated 
▢2 tbsp tamarind sauce (see Note 3) 
1/2 red onion, finely chopped 
6 tablespoons water, plus more if needed) 
CURRY: 
3 tablespoons vegetable oil 
▢1/2 tsp black mustard seeds (see Note 4) 
1/2 red onion, halved again (the who, a quarter of the orange one), and finely sliced 
▢1 tablespoon tomato paste 
▢2/3 cup canned tomato sauce or meat polp (Mom), OR the tomato passata, or the white by vera-see Note 5) 
▢2/3 cup of water 
▢400ml / 14oz coconut milk, no fat (see Note 6) 
▢1 1/4 teaspoons a collection of recipes / kosher salt (or 3/4 teaspoon fine salt) 
▢1 1/2 teaspoons sugar
